Instructions
- Combine the ice cream ingredients. Pour the half-and-half, sugar, and vanilla extract into one of the quart-sized bags.
- Seal the bag.
- Put the smaller bags in the larger one.
- Add ice.
- Add salt.

Why do you shake ice cream in a bag?
Salt lowers the melting temperature of ice. This lets you shake that bag of ice long enough to get the ice cream to solidify. The more salt you add, the lower the melting temperature. And the colder the temperature of the icy solution around the ice cream, the faster the cream freezes.
Is making ice cream in a bag a physical or chemical change?

Why does the outside of the bag get wet when making ice cream?
When that mixture makes contact with the cold outside of the plastic bag, some of the water vapor cools and condenses into tiny droplets. Those droplets stick to the bag. Because the bag keeps them cool, they cannot evaporate back into water vapor and so they collect on the outside of the bag.
