How long do you wait to ice a cake after marzipan?
Marzipan should ideally dry out before you apply icing. This can take anything from one to five days, with homemade marzipan usually taking longer than ready-made. It’s ready when it feels dry (it will feel quite oily at first).
How do you ice a cake after marzipan?
Trim away the excess marzipan from the base of the cake using a sharp knife. To cover in ready-to-roll icing start by dusting the work surface and rolling pin again with icing sugar. Take some ready-to-roll icing, which has been kneaded to make it more pliable and dust that with icing sugar too.
Why do you have to let marzipan dry before icing?
It’s good to let the marzipan dry for a couple of days so it gives a nice firm platform for the sugarpaste. I let mine dry for three days if I have a fairly thick covering, but usually two days. When rolling out marzipan don’t use cornflour as it can cause a fermentation problem. Icing sugar is best.

What do you put between marzipan and icing?
When the marzipan has dried out, lightly knead the sugarpaste and roll out (to a 0.5cm thickness) on a surface dusted with icing sugar. What’s the difference between marzipan and Frangipane?

Prepare the surface of the cake and use jam or buttercream as an adhesive so that your icing will sit evenly on it. Lightly dust your work surface and rolling pin with icing sugar so that the ready to roll icing doesn’t stick. Don’t dust icing sugar onto the top of the icing!
What is the difference between royal icing and buttercream?
The biggest difference between, say, buttercream frosting and royal icing is texture: buttercream is creamy and soft; royal icing hardens to a candy-like texture. Royal icing is as edible as the cookies and cakes it can cover.
Why is my marzipan cracking?
Like sugarpaste, marzipan will start to harden when it is exposed to the air so keep any unused marzipan tightly wrapped in plastic food bags. The two can react together to create mould and cracking in the marzipan. Stick your models together using a little cooled boiled water.
Do you have to marzipan a cake before icing?
Depending how you are planning to ice it a day or so’s drying time between marzipan and icing will help stop the marzipan staining through the icing but is definitely not essential. Mine are marzipanned and sitting in a cool place completely unwrapped to dry – may get iced tomorrow, possibly, if I have time.
Can you use royal icing on a boozy cake?
I would think kept air tight and well wrapped there would be no problem, especially if it is boozy. Don’t be intimidated by icing the whole thing though, it is really not difficult at all (unless you plan to use royal icing). As long as you have an icing smoother, they cost very little, marzipan and sugar paste are a doddle.
Why do you put marzipan on fruitcakes?
Marzipan’s original purpose was to create a barrier between the rich boozy fruitcake and Royal Icing that covered traditional English cakes. When to apply marzipan to a fruit cake?
Firstly, a marzipan layer, allowed to dry for a couple of days, will seal the cake properly before applying the roll out icing (sugarpaste). Fruit cakes are often stored for long periods of time (not to mention displayed throughout Christmas) and moisture from the cake would otherwise eventually seep through the icing and discolour it.
Is it OK to leave icing on after marzipanning?
You can, but you run the risk of the marzipan not being really dried out. That can lead to some oil from the marzipan seeping into the icing and discolouring it. If you don’t mind that, it shouldn’t be a problem. Oh now I remember . I’m supposed to leave it uncovered aren’t I? It should be fine.
